These are amazing for ice cream. Mix with half soy milk and sweet potato and add sweetener of choice. Put into ninja creami freeze and enjoy. My favorite method of cooking is steaming in the instant pot.

These take a bit longer to cook than orange sweet potatoes but once you cook them correctly — oh my goodness. The deepest purple color, near transluscent flesh, tastes like cake. But it feels healthy and nourishing.
My cooking method:
Wash sweet potatoes, scrub if you want to eat the skin. Dry then wrap the plain potatoes in foil and bake at 270 for 2.5-3.5 hours. Check them after 1.5 hours and then every 40 minutes until they are squishy and slightly oozing. I’ve also put them in a clay pot without the foil and that worked great.

Shipping date was 6/27, arrived on 6/30. These may be "off grade," but everything was in great shape! These are so delicious.
